Where to Invest and Where to Save

Not all catering cost is created equal. Invest in: the quality of the main protein (a great piece of lamb or well-sourced fish is noticed immediately), professional staffing (undertrained or under-staffed service ruins an otherwise good event), and the coffee and drinks service (guests remember bad coffee). Save on: the number of side dishes (fewer, better sides beat a sprawling mediocre spread), elaborate table centrepieces (flowers from a souk cost a fraction of a florist's arrangement), and premium disposables (quality reusable equipment from your caterer is often included in the price).

Negotiation Tactics That Work

Get at least three written quotes covering exactly the same scope. Use competing quotes as leverage — most caterers will price-match or add value rather than lose a booking. Ask what can be adjusted rather than simply requesting a discount: "What would you cut to bring this to AED X?" is more productive than "Can you do it cheaper?". Offer early payment (30 days before the event) in exchange for a discount — cash flow matters to catering businesses. Commit to future orders: a corporate account commitment often unlocks a 10–20% standing discount.

Avoiding Hidden Costs

The most common hidden catering costs in Dubai: overtime charges (confirm exactly what happens if your event runs over), corkage fees if you supply your own soft drinks (ask explicitly), delivery surcharges for venues outside central Dubai, equipment damage deposits, and cleaning fees if the venue requires specialist clean-up. A transparent catering company itemises all of these in the quote. If your caterer's quote is suspiciously low, ask specifically about each of these items — the true cost often appears in the final invoice if it was not discussed upfront.
