What We Were Asked to Do
A milestone 50th birthday celebration in a private villa on Palm Jumeirah. The client wanted an elegant, formal evening combining Mediterranean cuisine with Russian traditions for a mixed guest list of Europeans, Arabs and Russians.
Requirements:
- 5-course dinner for 60 guests with full table service
- Cocktail hour with canapes on the pool terrace
- Custom multi-tier anniversary cake
- Sommelier service with wine and non-alcoholic pairings
- Gold and white décor with personalised table settings
The challenge: blending cuisine cultures so every guest — Russian, European or Arabic — felt the menu was made specifically for them.
How We Delivered the Project
We created a fusion menu that honoured all three culinary traditions. The head chef personally consulted with the client over three tasting sessions to achieve the perfect balance of flavours.
Menu highlights:
- Cocktail hour: Russian blinis with caviar + Arabic mezze + Italian bruschetta
- Starter: slow-roasted beet salad with goat cheese and walnut
- Fish course: pan-seared halibut with saffron beurre blanc
- Main: Wagyu beef cheek 48h / lamb rack with mint gremolata
- Dessert: pistachio baklava + chocolate fondant + anniversary cake
Table décor used 18-carat gold charger plates, fresh white peonies, and personalised menus calligraphed for each guest.
Event Outcome
All 60 guests were served within 90 minutes of arrival. The fusion concept was universally praised — several Arabic guests asked for the blini recipe, while Russian guests raved about the lamb.
The anniversary cake moment — revealed under a golden confetti cannon — became the defining memory of the evening.
