What We Were Asked to Do
A grand Russian-style wedding in Downtown Dubai with a view of the Burj Khalifa — 200 guests, 10 hours of celebration, combining traditional Russian hospitality with modern Dubai glamour. The largest wedding catering project we had completed that year.
Requirements:
- Russian-style wedding banquet: multiple cold appetiser courses, hot mains, 5-tier wedding cake
- Traditional open bar: vodka, champagne, wines — running for 10 hours
- Midnight hot food service for dancing guests
- Personalised wedding favours (honey pots with branded labels)
- Separate VIP table with upgraded menu and premium service
The challenge: serving 200 Russian-style cold appetisers simultaneously at the start — a tradition where everything must arrive at once — and then maintaining quality across 10 hours of service.
How We Delivered the Project
Our team of 30 staff executed a full Russian-style wedding service. The cold appetiser spread was set on 20 tables simultaneously in under 4 minutes — a production line we rehearsed the morning of the event.
Cold appetiser spread (traditional Russian format):
- Olivier salad, herring under a fur coat, Mimosa salad
- Caviar service: black and red with blinis and crème fraîche
- Cold cuts: assorted charcuterie, smoked salmon, marinated mushrooms
- Pickled vegetables: cucumber, tomato, sauerkraut
Hot courses: chicken Kiev / beef stroganoff with potato purée / whole roasted sterlet (VIP table).
Midnight service: shashlik kebabs, khinkali, Georgian bread — served family-style to dancing guests.
Event Outcome
All 200 cold appetiser dishes arrived simultaneously — earning an immediate round of applause from guests who recognised the feat. The 10-hour service maintained consistent quality from first canape to midnight shashlik.
The father of the groom, a seasoned event organiser himself, said it was the most professionally executed wedding catering he had ever witnessed.
