The Challenge

What We Were Asked to Do

Emaar Properties contacted us three weeks before the New Year with a request to organise a gala corporate party for 200 employees. The event was planned on the Marina Bay waterfront with a view of the dancing fountains.

Key client requirements:

• Formal banquet with Russian-style three-course service and linen changes between courses
• Live cooking station with seafood and steaks
• Open bar with signature cocktails running 8 hours
• New Year décor: Christmas tree, lights, gold-toned table settings
• Staff: 20 waiters + 3 chefs + 2 bartenders

Execution

How We Delivered the Project

We split preparation into three blocks: menu, logistics, and staff. The head chef developed a bespoke New Year menu aligned with senior management preferences — pre-agreed allergen control, detox options, and vegetarian choices.

Menu highlights:

• Cold starters: caviar blini, tuna carpaccio, truffle crostini
• Soup: white truffle velouté
• Mains: ribeye steak with béarnaise / sea bream in salt crust / portobello for vegetarians
• Dessert: "Snow Globe" — chocolate mousse with raspberry coulis
• Live Cooking: grill with lobster, tiger prawns, and ribeye

Transport, set-up, and all preparations completed 6 hours before the event. A crew of 25 erected an outdoor banquet hall at +18 °C, installed wind screens, and set up full lighting.

Result

Event Outcome

The event ran without a single hitch. Guests praised the live cooking concept — the live station became the evening highlight. All 200 guests were served in strict rotation; no waits.

The Emaar HR Director sent us a personal thank-you note and a 5-star Google review. We are now the company's preferred catering partner for 2025.
